Peanut Butter Blossoms

This is by no means a healthy, hearty post work-out kind of snack. This is 100% a sit at home and indulge in a creamy, rich peanut buttery, chocolatey, heavenly cookie kind of night. Or it’s a “bring to your friends game night to win everyone over with a delicious treat” kind of cookie. Or even a perfect cookie to bring to holiday party, such as Christmas or Valentines Day. So basically it’s a cookie for everything… because besides being absolutely adorable, it’s perfect. Get your ingredients together, grab your apron and put on a vibes kind of playlist while you craft together the most delicious cookies!

Ingredients 

Cookie Dough 

1/2 Cup butter

1 cup + 1 tablespoon flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup granulated sugar

1/2 brown sugar

1 large egg (room temp)

3/4 cup creamy peanut butter

1 1/2 teaspoon pure vanilla extract

Instructions

To Prepare

Preheat the oven to 350 F and prepare the cookie pan by lining it with a piece of parchment paper. Fill the bottom of a shallow bowl with granulated sugar.

For the Dough 

In a medium bowl, mix together the flour, baking soda and salt. Stir and set aside. In a separate bowl, cream together the granulated sugar, brown sugar and softened butter. Add the egg and mix completely. Then add the vanilla extract and peanut butter until you have a smooth and creamy consistency. Sprinkle in the dry ingredients and mix until all the flour disappears

Option: Cover the dough with plastic wrap and put in the fridge for at least 1 hour. This helps the butter and peanut butter to resolidify and incorporate all of the ingredients together. It will also help the cookies to keep their round shape when baked.

For the Assembly

Remove the dough from the fridge and let it come to room temperature for about 10-15 minutes (if you did this step). Portion and roll the dough in 1 tablespoon balls, then roll through the prepared bowl of sugar and transfer to the baking sheet. Bake for about 12 minutes, or until the tops of the cookies begin to crack. Immediately once you take the cookies out of the oven, press a chocolate kiss into the centre. Either let the cookies cool or dive in immediately to enjoy this rich and smooth melty chocolatey kiss.
