Apple and Onion Pork Loin with Sweet Potato and Brussel Sprouts

Sometimes simplicity is better!

Pork Loin:

1-2 pork loins

1 onion, sliced

1 apple, sliced

1 tablespoon coconut oil

  1. In a pan on medium-high heat, heat the coconut oil and add the onion until transparent
  2. Add the apple slices and cook slightly
  3. Add the pork loin and cook on each side for 3-5 minutes (depending on the thickness)

Brussels Sprouts and Sweet Potato:

1 onion, diced

2 medium sweet potatoes, peeled and diced

1 pound brussels sprouts, cleaned, trimmed and cut in half

1 tablespoon coconut oil

  1. In a pan on medium heat, add the coconut oil and onion
  2. Add the diced sweet potato and season with salt. Cook for about 5 minutes or until they are starting to become soft
  3. Add the Brussels Sprouts and cook for another 10-15 minutes, or until they are crisped and soft
  4. Season with more salt if required
