Sometimes simplicity is better!
Pork Loin:
1-2 pork loins
1 onion, sliced
1 apple, sliced
1 tablespoon coconut oil
- In a pan on medium-high heat, heat the coconut oil and add the onion until transparent
- Add the apple slices and cook slightly
- Add the pork loin and cook on each side for 3-5 minutes (depending on the thickness)
Brussels Sprouts and Sweet Potato:
1 onion, diced
2 medium sweet potatoes, peeled and diced
1 pound brussels sprouts, cleaned, trimmed and cut in half
1 tablespoon coconut oil
- In a pan on medium heat, add the coconut oil and onion
- Add the diced sweet potato and season with salt. Cook for about 5 minutes or until they are starting to become soft
- Add the Brussels Sprouts and cook for another 10-15 minutes, or until they are crisped and soft
- Season with more salt if required
