Potato, Leek & Fennel Soup

There is nothing better than warm soup on a cold winter day. Nothing. This soup is so comforting and rich in flavour, it’s sure to be a household favourite.

2 Leeks, thinly sliced

1 Fennel Bulb, cored and thinly sliced

3 Garlic Cloves, crushed

4-5 potatoes, peeled and cubed

1 tbsp coconut oil

4 cups vegetable broth

about 5 strips of bacon

salt

**coconut milk or cream is optional for a creamier texture

  1. In a large pot, add the coconut oil, leeks, fennel, garlic and salt. Cook until soft
  2. Add the potatoes and cook for another couple of minutes
  3. Add the vegetable broth and simmer
  4. In another pan, start cooking the bacon
  5. When the soup mixture is soft enough, use a handheld blender until you reach a smooth velvety consistency
  6. Cut the bacon into small pieces and add to the soup
  7. Garnish and season as needed
