Spinach and Pomegranate Quinoa Salad

1 cup quinoa

1-2 cups fresh chopped spinach

1 pomegranate, seeds

1 bundle of chopped green onion

Dressing

1 lemon, juiced

1 tsp honey

2 tbsp olive oil

salt and pepper to taste

  1. Cook 1 cup of quinoa
  2. Roughly chop the spinach into smaller pieces
  3. Extract pomegranate seeds from a pomegranate
  4. Cut green onion into small pieces
  5. Add all ingredients to quinoa and mix well
  6. In a small separate bowl, mix together lemon juice, honey, olive oil and salt and pepper
  7. Sprinkle dressing over quinoa and mix well
  8. Place in fridge to allow to cool
