1 cup quinoa
1-2 cups fresh chopped spinach
1 pomegranate, seeds
1 bundle of chopped green onion
Dressing
1 lemon, juiced
1 tsp honey
2 tbsp olive oil
salt and pepper to taste
- Cook 1 cup of quinoa
- Roughly chop the spinach into smaller pieces
- Extract pomegranate seeds from a pomegranate
- Cut green onion into small pieces
- Add all ingredients to quinoa and mix well
- In a small separate bowl, mix together lemon juice, honey, olive oil and salt and pepper
- Sprinkle dressing over quinoa and mix well
- Place in fridge to allow to cool
